NASI MINYAK
Nasi Minyak is very popular and is the main dish for Malay wedding party in Malaysia. It is awkward if a wedding ceremony does not serve the rice to the guests.
The favorite side dishes to eat with Nasi Minyak are roasted chicken, beef, gravy, fruit pickles and papadom. If you want to try this dish, please attend any Malay wedding ceremony.
INGREDIENTS
8 pandan leaves, cut into fine strips
½ tsp salt
250ml water
100ml thick coconut milk
150ml water
2 drops pandan green colouring
340g rice, washed and drained

METHOD
1. Line a 20cm-base round baking pan with a banana leaf cut to size.
2. Blend pandan leaves, salt and water in a blender. Using a fine sieve placed over an empty bowl, press blended mix with a wooden spoon to strain out pandan liquid. Combine with coconut milk, water and colouring.
3. Put rice into prepared pan and pour coconut liquid over rice. Steam rice for around 30 mins over boiling water.
4. Leave rice to cool slightly; use a fork to fluff it before serving.
Tip: Top with toasted cashew or peanuts for added crunch and flavour
