Asalammualaikum all. How are you? I hope all of you in healthy condition. Today I wish to share cooking recipe favourite I namely catfish hot tamarind. Asam pedas is melayu cooking from melaka or johor. The hot tamarind cooking very popular in melaka and johor. Usually materials that must have is consist of fish (usually wold-herring, mackerel, red-sea-perch and terubuk fish), dry chilli, shallot, garlic, shrimp paste, ginger, galangal, fresh turmeric (if want improve further cooking), lemon grass, anatto leaves, wild ginger, tamarind, garcinia or kaffir lime leaf. Other than our fish could also use chicken to cook asam pedas.
INGREDIENTS
2 tail catfish
1 seed tomato, sides 4
1 buds wild ginger, sides 2
1 grip kesom leaf
5 seed okra
1 1 / 2 chilli rice ladle grind
1 / 2 tamarind paste table spoon
Enough water
Salt to taste
MATERIAL HIT FINE / GRIND
5 seed shallot
2 clove garlic
3 / 4 inches fresh turmeric
1 / 2 inches ginger
1 / 2 inches shrimp paste
Heating oil in pot, saute ingredients hit fine to sweet, include chilli grind and chilli sauter to crisp, use small flame and stir always
Including tamarind paste, stir well and cast enough water . Let boiling.
Including wild ginger, kesom leaf and fish, ripe over medium heat. Adding salt to taste and a little sugar. Lastly include tomato and okra, ripe shortly, sense and if ok can kill fire.
